#MySundayPhoto this week is this year’s Christmas cake – which actually has a little story behind it. It was supposed to be the bottom tier of a wedding cake I made for a friend in the summer, but I burnt it by leaving it in the oven a tad too long. It was only actually burnt about two centimeters in all the way around, so rather than binning it I’ve fed it brandy at regular intervals for the last six months to get rid of the smell and taste of burnt, iced it as normal then cut away the burnt parts by turning a circle into a star. A better baker than me would know how to ice a star all over but that was beyond me, so I just stuck to icing the top – and I reckon it turned out ok all things considered! The kids like it anyway! I hate wasting cake so I totally approve of your actions, and it looks amazing. A lot of Christmas cakes are not iced all around but I guess if you did do it you’d have to do a little patch of icing for each edge and then smooth them together? I wouldn’t bother π
